Impromtu Dessert

I had impromptu dinner guests recently and was fortunate enough to have food on hand to whip up a quick meal for everyone. …we are also fortunate enough to have a grocery store within walking distance allowing us to get anything we need in under a 5 minute round trip.

I had also picked up some berries at the local farmers market…oh who am I kidding, I had a Costco bag of frozen mixed berries in the freezer at the ready for a future carafe of Sangria.

Anyway, I whipped up a quick crowd pleasing dessert

Berries … at least 2 cups
1 1/2 cups sugar, divided
2 eggs
3/4 cup butter, melted
1 cup flour (I used wheat flour)
1 teaspoon vanilla extract

Preheat oven to 350
Spread the berries (I’ve found that blueberries, raspberries, strawberries, and any combo of them work) on the bottom of a pie plate, or cake pan. Sprinkle ½ cup of the sugar over the berries. Mix the rest of the ingredients in a separate bowl to form a batter. Pour the batter over the berries and bake at 350 for around 40 minutes. Allow it too cool for awhile, then gobble it up.
